Wildwood!!!!! Fun!!!

Yes, there is tons of great food to eat there, and what does Cory eat.. The sand..... and more than once might I add!!!!
We had a great trip... The only problem was sleep.. I did not get much.. Cory is not used to sleeping with me, and the room was very bright. They need to invest in some blackout shades!!!

WW - Blueberry Mini-Cheesecakes
Serves 12-
3 Points -
Ingredients:
2 tsp Honey
8 Gingersnaps crushed to fine crumbs
1 (8 oz) package light cream cheese at room temp.
1/4 cup of sugar
1 large egg
1 tsp grated orange zest
1/4 tsp almond extract
1/4 cup all fruit blueberry jam
1 cup fresh blueberries
(can replace blueberry with fruit of choice)

1 tsp grated orange zest
1/4 tsp almond extract
1/4 cup all fruit blueberry jam
1 cup fresh blueberries
(can replace blueberry with fruit of choice)
1- Preheat oven to 375. Line 24 mini-muffin cups with paper liner" spray the liners with nonstick spray. Microwave honey in a med microwavable bowl on high until warm, about 10 seconds. Add the gingersnap crumbs: mix well. Spoon 1 Scant tsp of the crumb mixture into the bottom of each muffin cup.
2. With an electric mixer on high speed, beat the cream cheese, sugar, egg, orange zest, and almond extract in a bowl until fluffy. about 3 minutes. Spoon 1 level tsp of the mixture into each muffin cup. Bake until cakes are puffed and set in the center, about 9 minutes. Cool in the pans on a rack.
3. Microwave the jam in a med microwavable bowl on high just until it beginns to bubble, about 15 seconds. Gently stir in the blueberries until evenly coated. Spoon 5-6 blueberries over each cheesecake. Refrigerate until ready to serve.

First of all, If you have a baby and you don't wear your baby, go check out her blog... There is a great amount of useful information about slings and wearing your baby, but more than that her blog is also great fun!!!! She always keeps me captivated with her writing & adventures with her children~~
3- Lorie's Stitch In Time
Another Mommy to 4 young children.. Yes I go to her for all kind of fun advice and fun things to do with my kids.. She has all the answers!!!! and most of them are in a bag!!!! :-)
