Works for Me - Mini Meatloaves (for meatloaf lovers)
I have to honestly say that I love meatloaf. I grew up with it, my mom makes awesome meatloaf, and for me it's one of those foods that just warms the soul. I receive Kraft foods magazine in the mail every so often, and in the last issue they had a recipe for Marvelous Mini Meatloaves and I thought what a cute idea. I decided to try it since I am on Weight Watchers and a big part of it is portion control and it worked out AWESOME!!!
Instead of making one huge meatloaf sticking on a pan and cooking it for over an hour and up to an hour and a half, you make smaller patties and put them in a muffin or cupcake pan. You cook it in those and they are perfect portion sizes. Not only that but it cooks in a lot less time. I cant say enough how much I love that idea. This is what inspired my heart shaped meatloaf idea for Valentines Dinner. I have heart shaped cake pans which i am going to make my meatloaves, spread a little ketchup on top and Voila! My Ode to Valentine's Day!

Valentine's Day
We are staying in this year in celebration of Valentine's day, so i decided to do something special. Guy is working Late on Valentine's day so we will celebrate it Thursday night, but here are some little things I decided to do at home to make it special!
* Mini heart shaped Meatloaves
* Mashed potato's (maybe with a touch of red coloring)
* A little bit of blush wine
* Red velvet cake
* Some cookies to send with daddy to work
Also Guy and Cory will be making a craft for their daddy and maybe a few other people (depending on their attention span)
