Where In The World Did You Dissappear To?

Well, that's a very long story in which I will not dive into quite yet. What is important is that I'm back, I feel the need and desire to write again and share with others.

So two weeks ago marked my 11 year anniversary with my husband. I am happy and proud to announce that as there were some points where 11 years didn't seem possible. My Monkey's are 7 and 4, 1st grade and Pre-k. Time really does fly. Actually a quote that I heard yesterday that I am now reflecting on is that....

The days are long, but the years are short.

How true that is. They may make you want to pull your hair out, but in the long run you don't remember those times. Just as it is that the pain you felt during labor and childbirth is almost as if it has been numbed completely and all you can do is vividly remember the experience, but the pain isn't really there. The love, the joy, the pride and accomplishment overwrites any pain.

The same holds true in a marriage. There may be really really rough times, but when you start to get through them, when they become a distant memory, it's almost as though the pain and heartache never happened, like somehow maybe it was all a bad dream that you just can't shake.

In the end what matters is that in life no matter what the circumstances, however painful, we will get through, we will forget the extreme pain, but hopefully somehow we'll be able to hold on to just enough memory to keep us moving forward and growing and prospering.

So I have to admit that I have been into the Twilight series, the True Blood series, and now The Vampire Diaries. I do not know why, I guess as a mom of 2 I need something to put my mind on vacation for a few hours a week! What I do want is to read the series of books that goes with True Blood, and The Vampire Diaries series. I read the Twilight series in quite a short period of time and absolutely loved them. MORE than the movie!

These will be put on my wishlist of things to read!

Nothing like reading a good series of books during the Cold weather all snuggled up on the couch!

Monkey Kisses Is Back!!!!

I have been missing in action because I was working full time with no computer access. The opportunity arose where I can stay home and watch my niece that was born in July full time.

I am so excited because going on my 3rd week and I am loving every minute of it. I am able to stay home with my boys as well. I am doing some preschool work at home with my 3 yr old, and my 5 yr old is off at Kindergarten half day. I get to bring him to the bus stop and pick him up and not have to worry about rushing back to a job where he has to sit until 6 p.m.

I feel absolutely blessed to be able to be back home taking care of my family. I do however plan on pursuing other endeavors to try to make a little extra income. So here I am catching up, starting back on my blogging adventure that I began a few years ago, having to take a break, but now I am back!

It is going to take me a little bit of time to catch up and get back on coarse, but I am going to try!

Toddler Woes

OH MY! The hitting, the biting, the potty training, the ability to cling to a leg while it's moving, the "mine's". So frustrating. The stage is not so much fun. The fun part of it, is the way they make you laugh. I guess that part comes with it to make up for all of the distress a parent of a toddler experiences!

On another note, my 2 month old cell phone's screen is becoming fuzzy. I need my phone. I may have to go to a service center for my phone to get fixed. ARE YOU KIDDING ME. WITH WORKING, 2 kids? When possibly am I supposed to drive 45 minutes to the closest service center to get my phone fixed?

Wow Almost 1 Year Since I've Posted Last.

Well to sum it up, it's been a rough road. Ups and Downs, Bumps and Hills! Cory had gotten tubes put in his ears, and this past January Guy had to get his tonsils and adnoids out. He was contracting strep from we dont even know where about 2 times a month for a while!

We had some other family issues, but all is mending and on the way up. There has been so much that has happened. My brother-n-law died from a suicidal drug overdose which he was involved in a hit and run, and no one could find him. When they finally did find him he was gone. It was really awful. My neice of 4 years of age is left without a father. It is truly sad.

On a better note, our children have been much healthier lately. I also am still working at the preschool. I have a home in a classroom so it is nice to get to know the children and work with them almost every day. It's hard to hold a job and a household all together.

My husband has been placed on nights permanently for a while which has really taken a toll on our family. The company he works for has been going down hill and layoff's left and right, so if nights it is, then nights it is.

I miss writing on my blog, and I plan on coming back and taking some time to journal my life again. To get involved in a group of other bloggers who as well share their lives and interests!

I've missed being here and I hope to make time to be back!

What????

I haven't posted since April????

That is nuts!!!!

So here is what has been going on. My job is going well. It took a while for all three of us, me and the boys to adjust to the new changes. Cory has had tubes put in his ears and his adnoids removed recently so hopefully that helps out with all the problems he's been having.
Of coarse right after the surgery he caught a virus which consisted of a nasty cold. Then little Guy caught it.

We've opened our pool and have been trying to enjoy the outdoors. But amongst all of that craziness we ripped out all of the carpet on our 1st floor and put pergo. Painted and got a few new things and it looks AMAZING!!!! I dont even recognize my home when i walk in sometimes but it looks awesome and will be so much cleaner without carpet which collects EVERYTHING.

We are now about ready to rip out the carpet in Cory's bedroom and lay pergo. Then we will be transitioning Cory to his big boy bed.... Yup you heard right... I would have preferred to do this in about another year, but he climbs out of his crib and that scares me.

I hope I can catch up more frequently.. :-)

March For Babies

Where have I been?

Well the old stay at home mom is only a part time stay at home mom now! I got a job working for a daycare/preschool center 2 days (sometimes 3 days) a week. It is great because both my kids get to go while I work!

The downside is my kids have been sick so on my days of freedom I've been dealing with that. I hope to get everything in order and post a little more frequently :-).

Tasty Thursday : St Patty's Day Recipes

Open Reuben Sandwiches WW Style 5 Pts
Makes 4 servings

Ingredients
1/4 cup fat free Mayo
2 Tablespoons Chili sauce ( I used seasoning and it worked just as great)
4 Slices of Rye Bread
1/4 lb thinly sliced lean corned beef
1 cup well drained sauerkraut
2 ounces deli-thin swiss cheese slices

1. Preheat the oven to 400' F
2. Combine the may and chili seasoning in small bowl. Spread mixture on bread. Layer with the corned beef, sauerkraut, and swiss.
3. Place sandwiches on baking sheet. Bake until cheese melts about 3 minutes.

The Things Keeping Me Up At Night

And no it's not the Boogeyman ! The good old green has been keeping me up at night. The stuff that does not buy happiness, but sure helps our stress levels stay grounded. Along with so many other Americans right now another sleepless night distressed over what the future holds with our homes, food on our table, clothing on our back stuff.

So I said a prayer! And I prayed, I prayed that a sign of some sort would show me how to help our family right now, and I thanked God for everything that we have including health, family, love and all the other goodies.

I woke up today not remembering that prayer, but finally getting a decent night sleep I decided to hop on the computer, maybe write an article. I did. I then chatted with my SIL just mentioned some things to her and BAM Something just seemed so right. It is not set in stone yet, but it is on it's way down the right path. So I will find out soon enough if this possibility will become a reality, which will be an answer to several prayers.

It is a wonderful opportunity that would benefit just not our finances, but more than that, my children, my sanity our home!

Feeling Oh So Much Better

The kids are so much better.. They have a few more days on the antibiotics, and I had a fun weekend with lots of adult interaction.

Saturday night I was able to go out.. First I went out with my brother and my friends to eat and have a few drinks. Then later on I went with my neice and sisternlaw to a nearby 80's club for a few hours. It was just what the dr ordered!!!! :-)

Thank you to all who gave me ideas, or made me feel not so alone in how I was feeling. I still absolutely can not wait until the nice weather comes!

I'm Sloooowwwllllyyyy Losing My Mind!

Lately I feel alone. Very very alone. Of coarse I have my children who are with my all day every day, and my husband who i get to see maybe an hour or two a day lately which usually doesn't come with much conversation due to work and all... But it feels like I'm not connecting with anyone. It's kind of putting me into a depression. It doesnt help that I have cabin fever, my kids are sick, and I feel trapped in my own home like a prisoner.

I am trying really hard to keep my spirits lifted, but I keep getting really down. I hope that I get out of this funk sooner than later. Any idea's on how to do this are welcomed! I know everyone gets in these funks at times.

Now i just my turn I guess.

Vacation From The Vacation Please!!!!

Well we came home to have both our boys sick. Monkey has a bad case of Bronchitus, and Chunky Monkey has a double ear infection, sinus infection and bad cough. So needless to say that I've been mothering them more than anything else. They are finally on the mend and are doing much better today thank goodness!

The first day home I did manage to get all of the laundry washed, dried and the kids laundry put away. But the house remained a mess. Today I finally got the house cleaned (Living room/Dining room, kitchen, bathroom. Aahhh does it feel nice. I dusted from top to bottom, scrubbed counter tops, and tables and put all kinds of stuff away. I have to steam the carpets and couch, but I will do that later tonight.

Does this all count if I have not been able to touch upstairs???? Hubby is on the night shift this week so our bedroom and bathroom is pretty much untouchable during that time. I'll have to work on that this weekend.

Doesnt it seem we always need a vacation when we get back from a vacation??? There is always so much work to be done. More work to go on vacation and come home then to just stay home!

Tasty Thursday : Lasagne

Trista at the Pumkin Patch is doing a Pasta Tasty Thursday today... So My favorite and loved dish is Lasagne.. I use a recipe out of my head so you'll have to bear with me.

Ingredients:
1 lb Ground beef
.75 lbs Sweet Italian Sausage
Some pepperoni
1 Cup diced Onion
1 Lrg container of Ricotta cheese
1 Lrg Jar of tomato sauce
1 package of Mozzerella cheese Sliced thin
1 package of Lasagne

1. Cook Ground beef, Onion and Sausage in a pan. drain. Boil Lasagne, rinse and leave in cool water
2. In 9X13 baking pan - cover bottom with one layer of lasagne - Spoon Ricotta cheese, then meat topping & diced pepperoni, Spoon sauce over top, then a layer of mozzerella cheese
Layer again in same order. Then put last layer of lasagne over top with tomato sauce and mozzerella cheese.
3. Cover with foil and bake for 30 minutes or until bubbling at 375' F. Then uncover and bake another 10 minutes until browned just a tiny bit. Let cool 10 - 15 min before serving!

Kids.. These Things Here Are Called Hats And Mittens!

We have not really had the chance to use them here in NJ where normally we would have had at least one good snowfall by now. Or at least would have been cold enough to put on so that the little hands you hold don't freeze. Due to our abnormally warm winter here, they've only but seen their hats a hand full of times.

Well we are headed up to northern Maine this weekend to visit my mother-in-law where they have several feet of snow. I normally absolutely hate snow, but if it's somewhere I am on vacation where I get to sit and relax and not do anything except play in the snow and possibly drink some hot cocoa and bake some home made cookies, I am ok with that.

I have been sick this past week and a half and I am praying that my kids do not catch it while we are up there. Let's just say that the dr's in this town are kinda scarce. It has been quite some time since we've been up there to visit. I was pregnant with my 4 year old the last 14 hour drive up there. The drive is usually long and exhausting and I am hoping the kids do well, but once we get there, their memere (grandma) has much planned hugs and kisses in store for them. :-) Trips to play in the snow with a toboggan, bundled up in their snowsuits so only their little eyes show through. Maybe even a snowmobile ride for some of us. I can not wait to relax and catch up.

With that, I am bringing my laptop with me, but will I get internet connection is the question. We will see. If I post then yes I do, If I do not then the connection has failed. See you soon!

My 17 month old monkey is climbing on everything. We have gates galore, but he still manages to get on the coffee table, the dining room table once in a while, the dining room chairs. It's driving us kooky!!!!! What do I do, we've tried every form of discipline and nothing seems to work. He's had bruises and cuts all over his head. He just goes back for more.

Does my child lack in common sense???? He seems to be very smart, but 2 seconds after a fall or getting punished he just goes back for more. Does he have no fear????

If anyone has any solutions for my monkey to stop climbing all over the house, please please chime in!!

The Sickies

I hate the Sickies... What can you do?? You cant avoid them.. It happens to the healthiest of families. I amongst the children am sick. Needless to say that is why I have not posted yet this week, and why my diet is going, but it's just going. I've been counting points pretty good, but last night i feel off. I am fully back on today but it's hard when you just dont feel good.

I will be back soon! Hopefully this will clear out fast!

Jumping On The Band Wagon!

Starting Monday......

I will weight myself once a week and write down progress.

I will be with Notebook in hand counting points, the points of every food and drink that enters my mouth.

I will be making sure that I eat the full required points.

I will plan my meals with discretion and use of my hundreds of Weight Watchers Recipes.

I will count every point in everything that I do eat.

I will work out at least 3-4 times per week.

I will make sure that I drink those 8 - 10 glasses of water every day.

I will not snack late at night.

I will get my required sleep in.

And Last but not least, I will enjoy it because I know that last year doing this I lost 25 lbs.

What Can Iced Tea Do For You?

My son came out of the bathroom with sippy cup in hand and hair spiked all over the place. He has the type of hair that will not spike if you cake gel in it and blow dry it straight up. It will lay down. Trust me I am a hairdresser I know this.

Well something I did not know was that Iced tea can make anyone's hair stand straight up!!! Works better than gel. Just have to make sure you use it while the bee's arent' in season!

Guy..... "Mom Look at me."

Mom... "What is in your hair?" "Guy what did you do to your hair??? what did you put in your hair??" (asking nervously wondering what it could be.)

Guy..... (running around like a lunatic) "Iced Teeeeaaaaaaaaa"

Mom ......(oh man I forgot i put iced tea in his sippy cup)

Tasty Thursday - Holiday Edition

Peanut Butter Kiss Cookies

1 bag hershey kisses
1/2 cup shortening
3/4 cu creamy peanut butter
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1 -1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
granulated sugar

375' remove wrappers on kisses- beat shortening, peanut butter in large bowl, sugar and brown sugar. beat until light and fluffy. add egg, milk and vanilla,, beat well.. stir together flour , baking soda and salt, gradually beat into peanut butter mixture

shape dough into 1 inch balls .. roll in granulated sugar, place on ungreased cookie sheet.
bake 8-10 minutes or until lightly browned.. immediately press hershey kiss into center.. then cool completely...

makes about 4 dozen

A Holiday Hoopla

1. List 12 random things about yourself that has to do with Christmas.

2. Please refer to it as a hoopla and not the dreaded "m" word.

OK Here I go

1. I love white lights on a tree and a color theme. My tree this is not the case. Hubby loves colored and we have ornaments all over the place.

2. I have 2 pairs of Reindeer socks which I love to wear this time of year.

3. I am obsessed with baking but I don't do it frequently because of the calories. This time of the year is my excuse. I will be having a cookie bake here Saturday!

4. I love Christmas movies. So much so that sometimes I watch them all year round. Elf is one of those on my top list.

5. I would much rather give gifts than receive them. It is much better watching people open presents than opening them in my opinion.

6. Christmas candle scents are my absolute favorite. Christmas Eve, Home for the Holidays, Christmas Cookie.. MY FAVORITES!

7. I keep the photo Christmas cards I receive all year round and they hang in my kitchen. I replace them when I get new ones.

8. There can be enough Christmas Decorations, but I do not yet have enough! :-)

9. I always forget to play Christmas music which I love around the house until a few days before The big day.

10. My birthday is exactly one week after Christmas every year.

11. My husband's birthday is exactly 10 days before Christmas every year.

12. My favorite part of Christmas is doing Christmas things with my family and taking the time to remember the real reason behind Christmas. The birth of Jesus!

Tour Of My Home At The Holidays

Thanks to BooMama we are able to have a Christmas Tour Of Homes. Isn't it a neat way to see real people, bloggity friends and the different ways we decorate as individual families and people. I think so!!! I cant wait to go touring around.

GREAT HOLIDAY COOKIE

ROSETTE COOKIES

1 c. flour
1/2 c. evaporated milk
1/2 c. water
1 tsp. sugar
1/2 tsp. salt
1 egg, unbeaten

Mix milk, water, sugar and egg together. Stir slowly into flour then beat with an egg beater. Fry in hot oil at 365 degrees until lightly browned. Grease rosette mold before dipping into batter. Gently shake finished cookies in powdered sugar.

May use deep fat fryer, electric frying pan or heavy pan on the range. May add food coloring and/or flavoring to batter before frying.

For as long as I can remember my mother has been making these incredible light cookies every holiday. She edits the recipe a little. Sometimes she will put honey and sprinkles on top instead of powdered sugar, and sometimes she will add flavoring to the mixture. But every year we could count on these to be sitting in the center of the table way before Christmas had arrived.

I now am going to carry on the tradition. I went to my mother to ask what I needed. I ordered the snowflake shaped irons and the handles. I can not wait to share these delightful cookies with my children in my home. My mother will still be making these cookies and sharing them in her home, but now i can as well!

1. The Polar Express - If you have not yet seen this.. DO SO... It will make you believe in the magic of Christmas even if you think your too old.

2. ELF - Absolutely hysterical. I can watch this one over and over and over. Absolutely knee slapping funny!

3. How the Grinch Stole Christmas - What can I say I am a sucker for whoville and the grinch.

4. The Santa Clause - The first and second were great! My son absolutely loves them. I have yet to see the 3rd but imagine it to be the same. Who doesnt want their dad to be St. Nick?

5. Miracle on 34th Street - Classic.. Some love The Christmas Story- I am not as big a fan of it, but this movie.. I love.. It's romantic, classic, and melts your heart in the cold of winter.

6. Scrooged - Who doesnt want to see the Ghost of Christmas Past, Present & oooh scary future??? A good Scrooge movie at Christmas is always a reminder to keep in good spirits through the season that can become very stressful.

7. Rudolph - Come on,,, A movie every child must see.

8. National Lampoon's Christmas Vacation - Hello, a Classic yet very funny movie you can never grow old of.

9. Frosty The Snowman - Another must see for every child. If you have kids and it's on the T.V. pop it on for them!

10. Christmas with the Kranks - Saw this one last year and it won me over.. It was very silly but funny at the same time. I liked it.

Tuesday- Cleaning the House from top to bottom.

Wednesday - Bridal Party dinner for the wedding this upcoming friday.

Thursday- Thanksgiving at mom & dad's house until late evening, home for some drama and for chunky monkey to bust a tooth right through the bottom of his lip.

Friday- Running around like a madwoman getting the last minute party details for Monkey's 4th Birthday party which was held here.

Friday Night - Birthday party. Over 25 people crammed into my house. It went pretty well under the tight squeeze I thought!

Saturday- Went to my cousin Kim's to see Family & my Aunt and Uncle from S.C. That was really great. Then went out to an 80's club with my neice and some friends and family for her birthday.

Sunday- Went to Father-n-law's for some yummy speghetti and gravy my SIL made and some tirimisu I made. MMMMMMM...

NOW- Eating low calories so that I can fit into the georgous dress on Friday.

So when you go shopping for Halloween candy the day before Halloween, and you come to discover that they have gotten rid of all the Halloween candy and started putting out the Christmas Decor you can do one of two things. (Yes this actually happened to me this year).

The dreaded shopping.
Since I have been with my husband, well we started out being the last minute shoppers. We would turn up out of money and broke every Holiday Season, or charging up credit cards.

When I was pregnant with Monkey and he was due December 6Th, I knew there was absolutely no way that I would be able to do last minute shopping, or close to shopping, so I started in September. Crazy huh??? Well that year it was a mad dash to have it all done by the end of October. I mean it was wrapped, labeled and put aside.

The following year, I decided to start in late September because it was so much less stressful but pace myself. WOW.. It was amazing. I got all my shopping done before black Friday, and somehow managed not to go broke. Since then I have been doing the same.

This year I am officially mostly done with my holiday shopping. I have a few small items to snag up, but that is it. Somehow I have managed to do this without hurting us financially. Of coarse we are not going crazy on people like we did when we were first married, but still we're able to get a small, special something for family.

Well, I hate that I havent posted in a while, but alot has been going on. To start my monkey's have been sick. They both have colds, and of coarse Cory gets it worse than most. Thank God it is not as bad as it could be with him though.

Then on the other hand, I've been trying to keep up with this house. For some reason it's like a tornado goes through it every couple hours. :-)

There is also something I will be working on the next few weeks that hopefully I can share with you around the start of our new year!!!! I am super excited and can't wait to get it moving. Ssshhh.. for now it's a secret!

So that's the run down.. I hope ya'll didnt miss me too much! I've had my little break but now I am back and running!

First of all, I own a Dyson. Not only do I absolutely love it because every other vacuum I have ever owned has broken in a year with all the pet hair that is in my humble abode, but they never quite sucked very good no matter what kind I purchased.

So when our last one broke, we went all out and bought a Dyson. I am in love with it. It was purchased over 3 years ago. Last year, it wasnt working so well, so I called Dyson and they sent me to a shop that they qualify to fix Dyson's and they did it free!!!!!! Of coarse it was still under warranty but now it is still running amazing.

You can purchase a PINK, YES I SAID PINK DYSON at Amazon.com and $40 out of every sale of a PINK DYSON will go to the Breast Cancer Research Foundation.

I think that Dyson is amazing for doing this, because who doesnt want a Dyson bagless vacuum????

What A Boost!!!

I am in a wedding in November, about 8 weeks after the birth of Chunky Monkey I had to go by the dress for the wedding. The bottoms I knew I would be smaller so I bought the smaller size, but the top was very tight in the larger size so I figured It would be fine.

Now this dress is very flattering on me compared to what other dresses would look like. So from the very beginning I have been very happy with my friends choice of bridesmaid dress.

I went today to have the dress altered. The bottom fit great, it's loose around the waist (now mind you this is the smaller size that did not fit at all, there was no way I was zipping it up 1 year ago) but not too loose. Just perfectly comfortable.

However, The top was extremely large. It was falling off of me, so I sent the seamstress to see if they had a smaller size. They did and it fit me absolutely perfect. So now not only is it flattering, but I think I look Amazing, and I will be absolutely happy wearing this dress for an entire evening in front of a crowd. I am in now way shape or form conceited, but I am however very proud of myself because although I have not lost all of the weight I wanted to by this time, I have gone down an entire size if not more than I was before I got pregnant with Chunky Monkey and that alone makes me extremely happy!

I am also happy that this dress is so versatile, that I could wear it again after the wedding to a formal event. :-)

Roasted pumpkin seeds have a nutty flavor and are packed with protein and fiber. Pumpkin seeds are delicious toasted and salted, but they're even better flavored with sweet and savory spices.

How to Roast Pumpkin Seeds

Rinse pumpkin seeds under cold water and pick out the pulp and strings. (This is easiest just after you've removed the seeds from the pumpkin, before the pulp has dried.)
Place the pumpkin seeds in a single layer on an oiled baking sheet, stirring to coat. If you prefer, omit the oil and coat with non-stick cooking spray.
Sprinkle with salt and bake at 325 degrees F until toasted, about 25 minutes, checking and stirring after 10 minutes.
Let cool and store in an air-tight container.

I am back.. I've missed blogging for about 1 week and I am very sad. I've had a lot going on to keep my busy though. My sister-n-law had a Halloween party this weekend. So I spent Friday helping her with the preparations, and all day yesterday making the food, dressing up, and then the party. It was fun, the kids had a blast. I was a Pirate, Hubby was a Pimp, Monkey was Darth Vadar & Chunky Monkey was Yoda. It was hysterical and so cute at the same time.

I PROMISE as soon as I get a cable to upload my photo's to this new computer that my wonderful hubby got me! I got an Apple Mac Book. So far it's been fun, I'm just learning it so please forgive me if my posts are not up to par.

I hope to have a cable for my camera by Wednesday for Wordless Wednesday!!!!

My Computer Is Busted!

My love, my connection to the outside world is gone. I am not locked inside this world known as my home with no outside connection except the telephone which I have grown used to not using.

Just kidding.. well not about the computer. I am greatful that I am able to use hubby's computer. It just will not be the same posting and keeping in touch as it is not mine.

We are waiting on a restoration CD from the manufacturer to see if we can get everything off of my hard drive, then we will see if we can reinstall everything and see if that fixes it. OH joy. So it may be a little while before I post normal blogs. I am trying to remember all of my log in's and passwords for now. And hopefully I will be able to connect with the outside world as my memory allows. :-)

Well Ta-Ta for now, and hope to be back to normal soon!

LG2008 Challenge Week 3

Only down .5 lb.. but that is still weight lost.. I wish It was coming off a little faster since I am working so hard. Working out so hard.. Working hard on my diet. Time will tell. :-)

Maybe someone has some extra tips for me??? I am open for any ideas.

I dont eat the same foods all the time, I am always changing my foods. I stay within my points. I drink plenty of water. About 96 oz a day. I've been getting in my dairy. Working out 4 days a week. Hmmm.. what else.. Trying really hard.. I'm not going to give up because I have to get off these 25 lbs, but it gets discouraging.

I am not losing weight??? I am so confused. I've been following weight watchers, writing everything down i eat, keeping at my points. working out 4 times a week for the last month??? I am so confused and I just don't get it. It's so frustrating. I'm not going to stop because I know I am healthier because of it, but I still have about 25 lbs to lose before I even get in my healthy weight range.

Tasty Thursday - Fall Foods Edition

Ingredients

3 eggs, slightly beaten
1 15-ounce can pumpkin
3/4 cup sugar
1/2 cup dark-colored corn syrup
1 teaspoon vanilla
3/4 teaspoon ground cinnamon
1 unbaked 9-inch piecrust
1 cup chopped pecans
Whipped cream (optional)

Directions

1. Preheat oven to 350 degrees F. In a medium mixing bowl combine the eggs, pumpkin, sugar, corn syrup, vanilla, and cinnamon; mix well. Pour into the piecrust. Sprinkle with the pecans.

2. Bake for 50 to 55 minutes or until a knife inserted off center comes out clean. Cool on wire rack. Refrigerate within 2 hours; cover for longer storage. If desired, serve with whipped cream. Makes 8 servings.

Look Great in 08 Challenge Week 2

So my update.. I am down a lb.. wohoooo.. I've been working out hardcore 4 days a week.. Very proud of myself. I've been counting all my points, i've gotten used to sucking down my needed water every day. I am back on track full force... So I know I'm going to start seeing results week after week. I will leave you with a WW recipe for this time of year.

Caramel Apple Pudding cake

4 pts 9 servings

2 box 9 oz yellow cake mix (jiffy)
1 tsp apple pie spice
1/3 C skim milk
1 Med apple peeled & coarsly chopped
3/4 C firmly packed brown sugar
1 1/2 C very warm water

Preheat oven to 350. Spray 9x9 baking dish with pam.

Medium bowl combine cake mix, apple pie spice and milk, mix well. stir in apple pieces. Spread evenly in baking dish.

Small bowl combine brown sugar and hot water, mix well, pour evenly over cake batter.

Bake 25-35 minutes, or until toothpick inserted in center comes out clean. Spoon warm cake and sauce into dishes.

I find I've been telling myself this frequently since I've read the book "The Secret". Every time that something negative happens, or I get down, I repeat that phrase over and over. It was actually in a movie and I cant figure out what movie. If anyone can tell me that would be awesome. I am thinking it's finding nemo but I am not certain. Anyway It does seem to help. That combined with a whole lot of praying seems to pick me back up.

Don't let life get you down, right??? Right... That is what I am trying to live my days like lately. The days have been going by much more smoothly with my positive thinking.

Tasty Thursday - Reuben Sandwichs 5 pts

This is amazing.. And I must say my husband who is a huge fan of Reuben sandwiches said this was by far the best he's ever had. It was so delicious that you would never even think it was WW friendly.. But it is one of their recipes.

4 Servings
1/4 Cup fat free mayonnaise
2 Tablespoons of chili sauce ( i used chili powder)
4 Slices of Rye bread ( I used whole wheat WW bread)
1/4 lb thinly sliced lean corned beef
1 cup well drained sauerkraut
2 oz deli thin swiss cheese slices

1. preheat oven to 400*F
2. Combine the mayo and chili sauce or powder in small bowl. Spread mayo mixture on the bread. Layer with the corned beef, sauerkraut and swiss cheese.

My Chunky Monkey Is A Cuddle Bug

My first monkey was a cuddler from the start.. He co-slept and he slept nuzzled next to my for the first 15 months of his life. He would always cuddle with us no matter what.

Chunky Monkey was never really a cuddler, never wanted to sleep with us, wants to just go and do his own thing. All of a sudden he is becoming very cuddly. Is it because I would force him so much??? Is it because even though he smacks me or pushes me away when I force hugs out of him I don't give in to him??

I don't know what the reasoning is... .Frankly I do not care one bit, because I am going to soak this up for all it's worth for as long as I can..

I love to cuddle both my monkeys!!!

Weekly Weight Adventures

So I am up on the scale, but i've worked out hardcore 5 times within a week.. So i am attributing it to muscle gain (I hope). I also have been counting my points and I have really been working on sucking down that water!!!! I hope to see some amazing results in the next few weeks since I am working so hard on myself. I know I will, and I am excited for the time I reach my goal weight.

I have been making my weight watchers meals for dinner, I need to work on breakfast and lunch. I'll have to hit the store in a few days to stock up on some more healthy snacks. Well that is my update for the week!

I have started working out again.. I feel really great about it. I have been putting on a movie for monkey, & chunky monkey naps while I work out, then shower. I also have started counting points again and chugging water.. So hopefully I will start seeing the scale start moving again. I know that it may not move for a little while though because of the muscle weighs more than fat stuff.. :-) I am just so excited because I am officially in a smaller size jeans and that makes me incredibly happy. I wouldn't even mind staying in this size jeans if I can just get to my goal weight and most of the weight I have to lose is in my upper body.

I am so excited.. I really hope that I can get these last 25 lbs off.. No I know I will.. I just have to be stern with myself and work at it. I want to be at a healthy weight for myself and my children and that is my motivation!

My entire house is a disaster. With the two, or should I say 3 boys running around and a dog plus myself, it just seems so hard to keep clean. Tomorrow is the day that I need to scrub it down. I may even attempt to steam my carpets again even though they were done 3 weeks ago. I gave my house a huge cleaning before Cory's 1st birthday, but all the people that came trucking through between then and now it deserves to be cleaned thoroughly again.

I can not snap shots of my entire house and post them, it would take too long! But I will return after the work is complete, and post my achievements! :-) Wish me luck!

Around this time of the year, I start thinking about Christmas shopping... YUP Christmas shopping. I learned about 3 years ago, when I had my first son that I needed to start Christmas shopping early because otherwise I don't have enough money or strength to get everything I need. I have already started to get little things here and there, but I also do some shopping around the holiday season.

There are a TON of people who do their shopping on Black Friday the day after Thanksgiving, or that is when they kick off their shopping sprees. That is so hard to do because that day, that one day of the year there are an incredible amount of people hitting the stores for their steals and deals.

I heard about this awesome site, Black-Friday.net who posts all the steals and deals online to be sold on Black Friday. This amazing site not only offers the ability to see all the steals and deals and make the purchases through direct links on certain items for Black Friday, but they will also email you for updated store Ads and give you Discount Codes.

Toddlerhood, The Second Time Around.....

Toddler hood: Generally the second year of life (IE, from 12-24 months), or the time period beginning when a child begins walking ("toddling") and becoming a 2-year-old

In Other words: When the child begins cracking their head on tables, pulling chairs down on themselves, falling on their own toys and crying because it hurts, and it doesn't stop until they are into their second year so watch out!!!!

Cory starting walking a week before his 1st birthday. It has been fun. He looks like a teddy bear. He also is developing quite a personality. I think he is definitely going to be into sports. I know that is impossible to tell right now, but he already shows all the signs, and me and my husband are doomed in this area. I grew up with 4 brothers, sports was the only thing on TV. Hubby's father watches sports all the time. Me and him were not really into sports, so it was great, never on our TV. I don't think this will be the case in a few years.

Cory- My Chunky Monkey, instead of doing so big to raise his hands up in the air, would rather do Touch Down. That gets his arms right up there. He's learned to high five me, and play patty cake. His favorite toys are balls, of any shape, material, or size. He is very adorable. It is hard not to kiss him every second of every day.

My Chunky Monkey has been sleeping through the night consistently since he was 4 weeks old. This has been amazing because my first Monkey didn't really sleep so well and that has followed him through today to which he still is a bad sleeper.

Tuesday Chunky Monkey went for shots and he was fine, then all of a sudden he's been desperately cranky and waking at night and screaming. I don't know what to do with myself and him. I don't do well with little sleep, Monkey wont take a nap at all during the day, and Chunky Monkey just doesn't want to sleep at night.

Not only that, he's walking, but when he is tired he falls and falls and falls some more. Did he bang his head a little too hard one day??

As I am writing this he is rolling around on the floor as if he could fall asleep at any moment.

Last night at one of the screaming fits, I went in and did not pick him up, I just rubbed his belly, eventually I guess he realized I was not going to pick him up and he started smacking me.

Hard!!!!

So I got up and walked out of the room and went to bed, he fussed a few more minutes and fell back asleep. I do not want him thinking that we are going to go in his room and hold him all night.

I love him dearly I do... But I remember times of almost losing my sanity with Monkey. I do not want that to happen with Chunky Monkey. He has been such a good baby up until about a week ago. I could always attribute it to teething, but I had even given him Motrin last night to see if that would help, which it did not. I just hope it is a very short lived stage, or we will be a very unhappy household!

Summer Ends With Quite A BANG!

So summer officially ends in my book today. Tomorrow I start a new schedule after being quite terrible all summer. All summer, I have had no schedule, have been doing bad with my diet along with other things. Yes I am blaming it all on summer but I have not been cooking as well as I should off the diet, and I am starting to feel pretty crappy!

Cory turned one on Thursday.. A few days prior to turning 1 he started full fledged walking. Yup.. He can even stand from the middle of the room without holding on to anything and walk from there. It's amazing how quickly he picks up on things. He has been playing with ALL of his new toys he got from his party, and walking around, falling quite a bit getting bruises all over. He is absolutely without a doubt a boy.

Tomorrow will contain many new actions that have not taken place since June. I will start back with weight watchers. I have said this before, but with all of the BBQ's and Birthday Parties it's been a little hard. That is not an excuse for myself I know, but it is my excuse none the less.

I will also start the preschooling of Guy. I have the week layed out and we are both very very excited to start. He is so eager to learn that I can't pass up teaching him a little and taking some associated trips out of the house.

Guy's bed time routine has been completely messed up. He doesnt go to sleep until really late, and he's been waking up and coming to bed in our bed, which causes lack of sleep on my end. With the new schedule of having "school time" I will be making sure he is up at a decent hour in the morning. No more sleeping in until 10:30 11 in the morning.

With that I am going to set a schedule for myself to clean the house. It is going to need to get a good cleaning once a week instead of when i feel like it. So we are actually going to start some routine's here. We've had them before, we just lost them completely in the joys of summer.

So it is probably going to be an overwhelming first week, but I know if i keep putting it off it will never get done. There is no time like the present!!!

So Look Out everyone cause here I come!!! I am back with full force as Mommy, Wife, Maid, Cook, New Teacher & WW client.

P.S. I will need all the support I can get! :-)

Me and My husband purchased our first home back in "99"... This Home. It was definitely a fix-er-upper and needed tons of work. We decided to take it into our own hands as it gets extremely costly having someone else do the work. Doing tons of research and buying products from several different places we can tell the good quality places from the cheap places.

Anglian Home Improvements has a wonderful variety of great high quality home improvement items. They range from windows, to driveways, to kitchens and Conservatory. I have looked at Anglian's Kitchen products and they are gorgeous! I only wish I had found Anglian Home Improvements when we remodeled our kitchen.

Tasty Thursday - Party Food Edition

Chili

Ingredients

1 pound hamburger
2 hot dogs, sliced
1 large onion, chopped
2 cloves garlic, crushed
1 can 16 oz. crushed tomatoes
2 stalks celery, sliced
3 T chili powder
2 t salt
1 T sugar
1 t Worcestershire's sauce
1/2 t red pepper sauce
1 can 15 oz kidney beans, drained

Directions

brown hamburger, onion and garlic - drain
stir in tomatoes, celery, chili powder, salt, sugar, Worcestershire's sauce, hot dog and pepper sauce. Heat to boiling, reduce heat and cover and simmer for 1 hour

Stir in beans, heat to boil, reduce heat, simmer for 15 minutes.
